Toblerone Cheesecake

I have had this post on my to do list for months.

Like, actually. I made this cheesecake back in December as a Christmas present for my co-workers. We had a pretty awesome lunch with ordering a whole heap of pizzas to the office and the digging into the cheesecake. It was loved. It was devoured. It was delicious.

So finally, I bring you the amazing pictures taken of the Toblerone cheesecake, which is definitely going to become one of my favourites.

Ingredients

For the base you will need chocolate biscuits, 80g of butter and 1/4 cup of ground almonds.

The filling requires 500g cream cheese, 1/2 sugar, 220g Toblerone and 1/2 cup thickened cream.

How to make

Firstly you will need to make the base. You combine the biscuits with the butter and almond meal in a food processor. I used that entire packed of biscuits, which was probably around 250-300g. I also increased the butter to 100g, as I like my bases to really stick together and not be all crumbly. I found the added almond meal in the base added a bit of somethin-somethin that my usual cheesecake bases don’t usually have. Definitely going to keep this one in my back pocket.

Once the base has been pressed in the tin, pop it in the fridge to harden.

Then beat the cream cheese and sugar together.

Beat in the melted Toblerone and cream.

Pour filling on top of the base and refrigerate over night.

I put little spikes on the top to try and make it look a bit fancy. Cause I try.

And shaved some Toblerone on top.

I really just wanted to eat nothing but this for days. Writing this post now makes me want to make one. Pity I don’t have a proper kitchen right now.

To get a bigger cheesecake, you could easily double the filling recipe, if you felt that way inclined. (I totally would.) But I also feel the filling would make a good stand alone dessert. You could put it into ramekins for individual servings or be fancy and use wine glasses. Add a dollop of whipped cream and a piece of Toblerone on top. Everyone will love you.
